2nd week of AP testing menu plan

It's the second week of AP testing and I have three test days this week.  One of the tests I'm proctoring is Music Theory, and one of the test elements of Music Theory is sight singing with a recorded response.  The recording portion of the test takes about 10 minutes, and each student has to record separately, in a room by themselves.  Y'all.  There are over 24 students taking this test.  And I'm the only proctor.  I asked the coordinator if we were really going to be there an extra four hours plus to get the recording done.  Fortunately, no we are not.  We're calling in reinforcements and there will be three rooms recording at once.  Even so, it'll take more than an hour to record all the responses.

Anyway, I've modified my meal plan once again this week* to account for possible low energy levels on testing days, making some things ahead of time, and planning others that are super easy and fast.

Here's what's on the meal plan this week:
  • Fend for yourself (both because of testing and because of a track meet)
  • Easy beef stroganoff, green beans
  • Tacos (from the freezer) with all the fixin's
  • Chicken fried rice (doubling the chicken and reducing the amount of rice)
  • Pizza, salad
  • Marry me chicken (y'all, this is so good), noodles, broccoli
  • Grilled top sirloin steak, mashed potatoes, grilled green veggie

* * * * *

*Thank goodness for that lasagna I made Monday for me to just pop in the oven on Tuesday last week.  I hadn't read the recipe carefully, and the Bolognese sauce had to simmer for an hour.  That definitely would not have happened if I hadn't made it ahead of time.  I even had enough ingredients to add two (8x8") lasagnas to the freezer stash--it would have been three if I'd had more noodles.

AP Testing Season & Menu Plan for the Week of May 5

It's AP testing season, and y'all know what that means.

Actually, you probably don't know what that means, at least not what I mean when I say you know what that means, because I don't think I ever told you: I'm an AP proctor.  And being an AP proctor is exhausting*.

As of right now, I am scheduled to proctor 10** AP exams over the 3 week regular and late testing period.  There will probably be more.  It's kind of a lot.

It's my third year, so now I know I'm going to be exhausted, rather than having the exhaustion sneak up on me, so I'm preparing mentally and environmentally.  I'm planning meals with testing in mind, and making some ahead of time.  Fingers crossed I don't completely crash each day I have testing (and then stay crashed the next day).

Here's what's on the menu this week:
Can you tell which days are my testing days this week (hint: there are three of them)?  Wish me luck and good energy this week!

* * * * *

* At least for me it's exhausting.  It stems from a combination of my social anxiety (having to hang out with people I don't know for hours at a time), along with just not being used to having to be anywhere on a specific day at a specific time anymore, plus having to leave the house before 7 am, looking presentable.  Oh, and then there's being in charge.

** Bubby's taking three, all in the first week.  He's way more resilient than I am these days, and he's also used to being out of the house for at least 8 hours a day on week days, so I feel like it will be a less exhausting experience for him.

*** We might be fending for ourselves and/or going out to eat this day because I have two tests during the day, plus two choir concerts that evening.

Menu plan for the week of October 30

By popular demand, I'm back with another menu post.

And by popular demand, I mean one person mentioned in passing that she used to look forward to reading my menu plan posts every Monday.

I'm here to serve.

When last I menu-plan-posted, I had started planning four weeks of meals at once, and I was loving it.  Menu planning kind of fell apart at the end of May and into June, because entropy, but now I'm back at it, and it makes my life so much easier.  I plan two weeks worth of meals, and repeat, for a total of four weeks at a time.

Here's what's on the menu this week:

*Whose idea was it to do a crockpot recipe on the first Monday of the rotation?  A crockpot recipe, I might add, that requires chicken to be thawed and cream cheese, that we did not yet have, to be added.  That is too much for a Monday. That person should be fired.

**The other day, we were eating supper, and I said, look, everybody!  There are carrots on the table!  Because that's what I say*** when I want my people to eat the vegetables that are on the table.  And one of the children kind of sighed with his posture, and I said, you'd rather have broccoli.  And the kid nodded.  And I said, or asparagus, or Brussels sprouts, or cauliflower.  And the kid agreed.  And the husband was incredulous.  He couldn't wrap his mind around someone liking grilled or roasted broccoli more than raw carrots.  And I, too, was incredulous, that my kid's father didn't already know this about the kid, having lived with said kid for all of said kid's life.

***Well, I don't always say carrots.  I will say the name of the vegetable that is actually on the table.  Because if I said, look everybody, there are carrots on the table, and there were, in fact, no carrots on the table, that would undermine my credibility.

Menu plan for the week of May 8

I'm late with the menu plan this week.  That's because it's been kind of a crazy meal week.  And it's been kind of a crazy meal week because it's been kind of a busy week for us.  There have been many iterations of the menu this week as the week has developed, so I'm giving you the menu as it was planned weeks ago.  Just know that what's listed below is not actually how it's gone down.  I mean, we had pizza on Monday this week.  Monday!  As of today, Thursday, none of these things has been consumed on its planned day.

Here's what was on the menu this week:

Menu plan for the week of May 1

It's May!  Doesn't really feel like it, though.  This is the first week of our newest four week meal rotation, and I am still enjoying planning and cooking this way.  The third and fourth weeks are so easy, and it's nice to have the space to try new recipes every month.

Here's what's on the menu this week:

Menu plan for the week of April 24

This is the last week in this particular four week menu rotation, so there's hardly anything for me to actually cook this week.  It's so gratifying to reap the rewards of past Scarlet's labor.  I could get used to this.

As far as saving so.much.money, I've noticed that the first grocery shop of a four week rotation is about 1/3 more than my typical weekly shop, and each of the three subsequent weeks is around 2/3 of what I would spend in a typical week, so that means that I'm possibly saving a little bit by shopping this way.  Maybe?

Here's what's on the menu this week:

Supper:
  • French dip sandwiches (I made extra and froze the excess.  There's enough left that I bet I'll get a couple of lunches out of it, too), provolone, buns, green beans
  • Tator tot casserole (from the freezer, yay!), applesauce, bread with butter
  • Fend for yourself (always a favorite)
  • Sheet pan chicken quesadillas (the filling's in the freezer, along with the shredded cheese), carrots
  • Pizza, salad
  • Hot dogs or brats, buns, corn, tator tots or fries
  • Grilled chicken (already marinaded in the freezer), broccoli, salad

Other:
  • Cookies.  Maybe these or these, because some clearance Reese's peanut butter eggs jumped into my basket the other day, and now they're hanging out in the baking cupboard, leering at me.
  • Beef & broccoli casserole--I've been lacking in lunch options the past couple of weeks, and I happen to have leftover broccoli, and most of the other ingredients (I might even have some celery in the freezer, but if not, there's always celery salt)

Meal plan for the week of April 17

Whoops.  I'm a little bit late this week.  Hopefully you all have been able to eat without my guidance.  I feel like you're probably ok, especially since I told you that this week is pretty much a repeat from 2 weeks ago.

In other news, our microwave stopped working.  We're fairly confident that it's a switch issue and we'll be able to fix it, so don't worry about us.  In the meantime, we've been using alternative means to reheat leftovers, and we've been extra vigilant about taking things out to thaw with plenty of time.  I've found myself thinking, though, how did people reheat leftovers before household microwaves were common?  Did they use the oven?  Stovetop?  Just not have leftovers?  Repurpose leftovers into new meals?  Please comment below if you have any insight into this issue.

And now for the moment you've all been waiting for, here's what's on the menu this week:

Supper:
  • Shepherd's pie (from the freezer, yay!), applesauce, buttered bread
  • Fend for yourself
  • Nachos, raw veggies
  • Chicken wings, green beans, jello
  • Pizza, salad
  • Hamburgers, buns, corn, chips
  • Grilled pork chops, roasted broccoli, mashed potatoes

Meal plan for the week of April 10

Kind of a strange thing is happening with my menu planning.  I used to be super annoyed when the meal plan had to change for some reason, like a meeting I hadn't known about, which meant more of the peoples weren't going to be around for supper, or a practice being canceled, which meant more of the peoples were going to be around for supper.  I found this to be especially true when I planned more than one week at once.  I'm not sure why.  Maybe it was just because, if I was planning more than a week in advance, it was so much more likely that unanticipated events would occur at some point in the execution of that plan.

This time, though?  It doesn't bother me so much.  At the beginning of the week, I take a look at the calendar, and I take a look at the meal plan, and I move meals around if they're not going to work for the day they're planned.  And there's been a lot of meals not working on the day for which they were planned because track and field is a strange sport*.  And also, life.

This week, for instance, we're not going to be able to eat supper together on Tuesday, so the fend for self originally scheduled for Wednesday shifted to Tuesday.  Monday's meal moved to Wednesday, because we'll be celebrating a birthday on Monday with the birthday boy's choice of going out to eat.  Tuesday's meal was moved to Friday because I already did some meal prep for that Tuesday meal.  Friday's meal was taken off the schedule because it's something (pizza) we have every week, and I felt like no one would miss it this week.

And it's all fine!  It's ok!  I'm feeling sanguine** about it, instead of annoyed.  Yay!

And yay for food!  Here's what's on the menu this week:

Menu plan for the week of April 3

It's April, y'all, and as you know, if you read yesterday's post, I've got meals planned for the rest of the month.  Yay!  One of the advantages of repeating meals every two weeks is that I can meal-prep the first week for the third week.  So this week, I'll be making two Shepherd's pies--one for this week, and one to freeze for two weeks from now.

Here's what's on the menu this week:

Supper:

Other:
  • I've been on a peanut butter cookie kick lately, but I think I've run out of peanut butter cookie recipes that I want to try for now.  Regardless, I'll make some sort of cookie, probably.  Maybe these?

How I've been menu planning

Well hello, strangers.  Long time, no read.

Today I wanted to write about how I've been meal planning lately.  Spoiler alert: it's been so.much.easier.

For years I have heard and read that once a month shopping is a way to save so.much.money.  The idea is, you only shop once a month for everything for that month, and by staying out of stores the rest of the month, you're reducing impulse buys, and you're more likely to make do with what you have, versus running to the store if you discover you've run out of something.

When we lived in West Virginia, I shopped once every two weeks, because we were so far out of town.  It was easier to plan meals back then, because the kids didn't really have opinions about what they did and didn't like, plus our family, as a whole, ate much less back then, so I could rely on leftovers at least once or twice a week.  I mean, the kiddos were 5 and 2 when we left.  How much can a 5 year old eat, versus our current at-home teenagers?

When we moved, we were much closer to grocery stores, and I fell into the habit of shopping every week. Over the years, it's become more and more difficult to plan meals for various reasons, and it became a huge chore to figure out what we were going to eat every week.  I wanted to plan 2 or 4 weeks at a time, but I felt like I just couldn't get ahead.  It was so difficult to get one week down, I couldn't wrap my mind around doing any more.

In January, I decided I was going to do it: I was going to bite the bullet and plan a month of meals at once (it was fortunate that the month I decided to start has only 28 days :) ).  So here's how I did it.

I had already loosely defined a few days a week, for instance, we almost always have pizza on Fridays, and grilled food on Saturdays and Sundays.  So I put those things into the plan.  Then I filled in the other days, for two weeks, with themes, like Mondays were casserole-type things with ground beef, and Thursdays were pressure cooker rice bowls.  Finally, I copied those two weeks to the next two weeks, et voila!  I had 4 weeks of meals planned.

And let me tell ya, it wasn't quite et voila.  It actually took me about 3 weeks to get that first plan actually planned.  I spent a lot of mental energy trying to plan a variety of proteins, styles of cooking, and flavor profiles.  But I am so thankful that I spent that mental energy up front, each week when I don't have to think about it.  Now whenever I think of a meal I'd like to try for the following month, I put it on the calendar right away, and generally the plan is complete by the time we finish the previous plan.

That first month, I actually attempted to get all of the shelf-stable food in my first shopping trip of the month, but I knew I'd be going back every week, since I could only fit one week's worth of milk in my fridge.

I don't think I've saved too much money over the past two months.  For sure I didn't save the so.much.money I'd been promised, possibly due to prices rising, and possibly due to me already keeping pretty tight control over grocery spending.  But I'll tell you what I did save: my sanity.  It was so lovely to only plan once and have 4 weeks of meals on the calendar.  At this point, it's easy for me to sit down on a Saturday or Sunday and make my grocery list.

So yay!  Menu planning, for now at least, is not as difficult as it has been in the past.  Let me know if you try it, or if you have any questions.

Up next: this week's menu plan.  Stay tuned.

Menu plan for the week of September 26

Last week, the same friend who gave me some of her sourdough starter handed me a box that was labeled "banneton proofing basket kit."  Take this, she said, I have an extra.

I think most people, when they hear sourdough, picture those round crusty loaves with intricate patterns carved into their tops.  And one of the tools that the folks who make those types of loaves use is a banneton, which is a fancy name for a basket that holds the dough during the second rise.  And I can not, for the life of me, figure out how those folks get their loaves out of their fancy baskets and into their Dutch ovens for baking without totally deflating the dough.  My friend said she couldn't figure it out either.  Because of that, and because there are so many other ways to use sourdough starter that my family is more likely to actually eat, I honestly had never given serious consideration to making one of those artisan loaves.

But then, the kit came into my life.  When I opened the box, I was expecting to find a banneton and a banneton liner.  I did find those things, along with a few other tools, but on top of all that laid the gorgeous book, Artisan Sourdough Made Simple by Emilie Raffa.  I am a sucker for a beautiful cookbook, and this, my friends, is a beautiful cookbook.  And now I need to make all the things, including the things that require a proofing basket.  Up first, a Cinnamon raisin swirl loaf (without the raisins).

And here's what else is on the menu this week:

Supper:
  • Chicken fettuccini alfredo, green beans
  • Burritos or tacos, taco toppings, carrots
  • Beef stroganoff or fend for yourself
  • Fend for yourself
  • Pizza, salad
  • Hamburgers or hot dogs, buns, chips, raw veggies
  • Grilled pork chops, mashed potatoes, grilled broccoli

Meal plan for the week of September 12

Remember how I asked for meal ideas last week?  Well, one of you actually responded!  Isn't that exciting?  Someone actually read a blog post, and was so moved by it that they took action.

That person suggested chicken burrito bowls, which you may recall we actually had on the menu about a month ago, and we really liked them.  And by we really liked them, I mean I really liked them and no one else complained verbally about them.  So it's on the menu again this week, because who cares how anyone other than the cook feels about the meals?

I'm strictly using the whole eat it or starve philosophy of meal planning at this point.  Of course, they don't actually starve, because they are all either adults or teens (and one of them happens to be both adult and teen), and they are fully capable of feeding themselves.

Great idea, dear reader!  Thank you.

And, uh, if any of the rest of you would like to be thanked publicly in this space, feel free to send your meal ideas my way, too.

Here's what's on the menu this week:

(non) Menu plan for the week of September 5

I did a thing the other day.  I canned potatoes for the first time.  See, we needed potatoes, and the 10 lb bag was just a couple of pennies more than a 5 lb bag, so I bought the 10 lb bag, even though a week or two prior to that, I had composted three moldy, smelly*, and oddly juicy rotten potatoes.

It was quite the internal debate, in the store.  Should I buy the 5 lb bag, which we are much more likely to use before they go bad?  Or should I get double the potatoes for about the same price, knowing it would be much more challenging to use them up?

Well, in the heat of the moment I chose double the potatoes.  And after I cooled down, I realized that with only one potato-eater currently in the house, there is no way I would use them all.  Of course I berated myself mentally, because that's how I roll.  I mean, by purchasing the 10 lb bag, I was virtually guaranteeing that I was going to be throwing away potatoes in a month or so.

When I told Bubby I didn't think we'd be able to use the potatoes, he told me that sure we could.  He still remembers the week that he and his brother ate mashed potatoes every. single. day. with fondness‡.  He didn't seem too enthusiastic when I told him he was welcome to try†.

So I decided to can the potatoes.  Our most frequent preparation of potatoes is mashed, and by canning potatoes, I'll be able to get mashed potatoes on the table in about 5 minutes.  Based on the instructions in the Ball Blue Book of Canning, I expected to be able to get 2 quarts, that I thought I could probably stretch to 3, which didn't seem worthwhile canning, but I was committed.  I ended up with 5 quarts, which for me is a full (pressure) canner load, plus enough extra for a Bubby** sized serving on Saturday.  So yay!  I'm looking forward five easy-peasy mashed potato preps, and zero rotten potatoes.

Also last week, I canned salsa (it's super hot this year), zucchini "pineapple", green beans***, and pinto beans.  I think I'm done for now, but I do have some tomatoes in the freezer that I will eventually have to do something with.

The menu plan is a mess this week.  School started, and I am exhausted.  So we'll probably have breakfast for supper this week, along with fending for ourselves a couple of times, plus pizza, maybe hot dogs, possibly tacos or nachos.  I don't know.  I feel like this is awfully early in the "new year" to stop caring about what I'm going to feed my family.

What's cooking at your house this week?  I could use some ideas.

* * * * *

*I honestly thought I was smelling unshowered teenager whenever I caught a whiff.  Which was so weird, because sometimes there were no teenagers around, showered or otherwise.

‡I do not.

†Bubby generally does peel and cut the potatoes when we have mashed potatoes, but the last time he did the actual mashing there was an incident with the salt shaker, and he's been reluctant, since then, to mash the potatoes himself.

**A Bubby sized serving is equivalent to 3-4 normal person servings.

***I know.  I said I wasn't going to can green beans anymore.  But they just keep coming, friends.  And I had to do something with them.  And we already have 4 family sized portions in the freezer.

Menu plan for the week of August 29

It's football season, friends, which means Bubby needs to get picked up from practice most days right during the time I need to be making supper.  It shouldn't be an issue, because generally there is at least one adult at home who could help with supper, while another adult picks up the kiddo, but it does require planning (and prepping) ahead on my part.  The other days, he has games, which means there generally aren't any adults at home and we get home late (hence the two fends for yourselves this week).

Here's what's on the menu this week:

* I accidentally bought maple-flavored sausage patties, so I've been feeding them to my family, since they like maple-flavored things.

Menu plan for the week of August 22

I've been doing baking days about once a week for most of the summer.  The idea is, if I'm going to heat up the oven, I want to just do it once, both to save energy (because I won't have to preheat for each baked item), and also to avoid heating up the house more than once.  Last Thursday, I made bread (sourdough, of course, which means I wasn't using the bread machine), two kinds of muffins (also sourdough: coffee cake and zucchini), and cookies.  I also made taco bean soup, which I did not bake, but since I'm out of home canned pinto beans, I had to cook the beans first.  It was almost too much for me.  There were ingredients and dirty dishes and recipes in progress and finished products everywhere.  I ran out of cooling racks.  I set up the bread machine (for the pizza crust for supper that night) on the floor in the dining room because I didn't have counter space for it.

Have you ever watched a YouTube food prep video?  Yeah.  They make even more stuff than I did, every week, and they don't seem overwhelmed in the least.  I wonder how they do it*, while filming, no less.

Regardless of how they do it, I, too, manage to get food on the table most nights.  Here's what's on the menu this week:

Supper:

* Well, for one thing, I think they make use of more mixes and convenience items than I do.  I mean, I don't see them feeding their sourdough starter or cooking beans or even making muffins from scratch.

Menu plan for the week of August 15

A couple of weeks ago, inspired by this video, and a Sam's Club sized purchase of boneless skinless chicken breasts, I made up four bags of marinated chicken for the freezer.  As I mentioned last week, I often realize, right around the time I want to start cooking, that I haven't marinated the meat.  At least this way, I don't have to think about it for another few weeks.  The idea is that the meat marinates as it thaws.

So far, due to the luck of the draw (aka grabbing the first package that comes to hand), we've tried cilantro lime chicken and southwest chicken, both of which I thought were pretty good.  We have yet to try rosemary mustard chicken and lemon garlic chicken, one of which will make its way to our plates on Sunday.

Do you marinade meats in the freezer?

As for the rest of the week's meals, here they are:

Menu plan for the week of August 8

A few weeks ago, I decided that I was going to do as much weekend meal prep as possible on Fridays, so that I wouldn't have to, say, peel and cut potatoes at 4:30 p.m. on a Saturday, or realize at 5 p.m. on Sunday that I forgot to marinade the chicken.

This week, that weekend prep would include making hot dog buns, cutting the potatoes for the French fries, cutting up veggies for salad, and cutting up and seasoning the grilled veggie (the chicken is already marinating in the freezer).  I haven't been doing all that great at remembering each week, but when I have, it's been really nice to be able to be more hands-off for meals on weekends.

Do you prep anything ahead of time to make mealtimes go more smoothly?

Menu plan for the week of August 1

 Hey friends, look: it's August.

So last week I made the beef potato casserole using part mashed potatoes and part diced potatoes, and it was yummy, but also soupier than usual, probably because the mashed potatoes already had some butter and milk in them, and I also used the liquid ingredients that the recipe calls for.  I don't think I will use mashed potatoes again, but I'm glad I tried it.

And I feel like there was something else I wanted to tell you, but I can't remember right now, so that will have to wait for another time; it can be something to look forward to.

Here's what's on the menu this week:

Supper:
  • Fend for Self or spaghetti
  • Tacos
  • Easy beef stroganoff, corn, applesauce
  • Creamy Tuscan chicken, rice, broccoli
  • Pizza, salad
  • Grilled steak with mushrooms, mashed potatoes and gravy, grilled broccoli
  • Grilled chicken, salad, veggie

Menu plan for the week of July 25

Last week I harvested the first zucchini from this year's garden.  Apparently my friend who lives about a mile and a half away has zucchini coming out of her ears (not literally.  It's actually coming out of the garden, but it is prolific.  She's out of town this week, so maybe I should offer to go over and harvest for her), but not me.  I do not have zucchini coming out of my ears or my garden prolifically.  We've been having a flower problem, in that it's rare that we'll have both male and female flowers open at the same time, which kind of hinders fertilization.

Anyway, I harvested the first zucchini, and I asked the kiddos what I should do with it.  I mean, I knew when I asked that question that they were not going to suggest eating it as a veggie.  I knew they were going to suggest eating it as part of a sweet treat.  And I was right; they wanted me to make muffins with it.  So I did.  I used this recipe for chocolate zucchini bread, but made muffins* instead of a loaf.

They were really good!  Not too sweet, and kinda messy to eat (because they were so moist), and moist, and delicious.  I'll definitely be making these again.

Here's what's on the menu this week:

Supper:
  • Fend for self or spaghetti
  • Nachos with guacamole and other yummy fixings
  • Chicken drumsticks, potato salad (gonna add pickles this time), raw veggies
  • Beef and potato casserole (I've often thought this would be good/better with mashed potatoes instead of diced potatoes.  I've got some leftover mashed potatoes, so we're going to find out), green beans
  • Pizza, salad
  • Hot dogs, buns, carrots, jello
  • Grilled chicken, salad, grilled veggie (zucchini if we have one ready from the garden; broccoli if not)

Other:

* I'm not sure why I prefer muffins to loaves in the quick bread space, but I do.  It's kinda weird because I'm not a crust or edge fan, and muffins have more crust than loaves, but there we go.

Menu plan for the week of July 18

Hi friends.  This week we're on to week three of avoiding the grocery store.  Of course, we're extremely low on fresh fruits and veggies, and low on frozen and canned veggies and fruits, so it's more like avoid purchasing anything for the main dish at the grocery store and only buy veggies, fruits, milk, eggs, and orange juice.  And oh yeah, there's a birthday this week.

It doesn't have quite the same ring, does it?

Anyway, here's what's on the menu this week:
